Yes, my solution worked. It took days of trying different things. In the end, here's what I did.
1. Went back to the original phsical server and did another p2v conversion.
2. Copied the delta files from the original server into the new folder created with the p2v files.
3. Found the CID of the new vmdk file associated with the p2v conversion. I then changed delta CID to match it.
4. I created a new VM in vSphere and pointed it to the delta file with the new CID.
5. When I powered on the new VM, Windows 2000 would not boot. I was getting a SYSTEM error.
6. I used a Windows 2000 CD and tried to do a repair, but that was useless. However, I was able to see that the data that was stored on a different partition was there. All intact.
7. I reinstalled Windows 2000 server on the C: partition (no data there).
8. When I finally got windows back up, I ran a chkdsk /f on the data partition. It found thousands of files that needed repair.
9. I used the Beyond Compare software to combine the data from this server to our production server.
In the end, it took forever but all of the data was recovered. And I learned a great lesson about having reliable backups instead of just snapshots.
